Bacon Onion Rings with Adobo Aioli Sauce - THM - Keto - Sugar Free - Gluten Free

This recipe is about as easy as it gets. It is so simple, your little kid could probably put it together (my 8 year old is pretty good at it, actually!). It doesn’t require any breading, dredging, or deep frying. It doesn’t require any special ingredients (all ingredients are readily available at just about every basic grocery store). It doesn’t take a lot of prep time. It’s just simple and delicious.

These bacon onion rings and adobo aioli would make great additions to a potluck, a party, a picnic, or a football game. They are also awesome for a side dish or a snack. Or, you know, breakfast (because why not, nobody polices what you eat for breakfast…and it’s bacon, so it was basically made for breakfast).

The bacon onion rings and adobo aioli are Trim Healthy Mama and keto friendly, making them awesome for weight loss and weight maintenance journeys.

Bacon Onion Rings

Bacon Onion Rings Ingredients

The key ingredients in this recipe are thin cut bacon (thin cut is important–thick cut probably would work also, but not as perfectly as thin cut), a white or yellow onion, some mayo, a can of adobo sauce (or chipotle peppers packed in adobo sauce–just drain some of the sauce out), and a few staple spices.

The Aioli

So typically an aioli is an emulsion made with the likes of egg yolk and oil. But because I wanted to keep this recipe super simple and easy, I totally cheated. I used mayonnaise instead. So while it’s not a true aioli, it still has that creamy texture and absolute deliciousness that a familiar aioli might have.

The purpose of the aioli is for dipping. Some aioli sauces are, well, sauces, that are poured over the food being served. In this case, however, it’s just for delicious dipping. And it’s totally optional, but surprisingly delicious in combination with the bacon onion rings.

Ingredients

For Onion Rings

  • 1 large (or 2 medium) yellow or white onions
  • 1 pound thin cut pork bacon

For Aioli

  • 3 tablespoons sugar free mayonnaise
  • 1 tablespoon sugar free adobo sauce (from a can with just adobo sauce or drained from a can of chipotle peppers)
  • 2 teaspoons dill relish
  • 1/2 teaspoon mineral salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
COOKING MODE

Instructions

  • Preheat oven to 400° F. Line a baking sheet with parchment paper, aluminum foil, or a silicone matt.°
  • Slice the onion into 1/4-inch thick rings. After slicing, separate the rings, but keep two rings nested together for each onion ring to make it a bit thicker.
  • Wrap each ring with 1 to 2 slices bacon (they can stretch a bit to get them all the way around). Place on baking sheet.
  • Bake for 20 minutes (more or less) until the bacon is the desired amount of doneness (some people like it less cooked, some like it crisp; bake to the point you prefer).
  • Meanwhile, in a small bowl, mix together all of the aioli ingredients.
  • Allow onion rings to cool till they’re touchable. Serve with the aioli as a dip and enjoy!

Notes

Instead of the oven, you can make these in an air fryer. Add them to the air fryer basket in batches so none are overlapping. Fry at 400° F for 10 to 15 minutes or until onions are tender and bacon is crispy.

These are a heavy S for sure, but make such an amazing on plan treat! I make sure my family is around when I make them so everyone dives in and I don’t eat them all myself lol.
