“Mmmm, this tastes like a candy cane, Mama!” my 5-year-old son exuberantly exclaimed as he eagerly sipped up the low carb shamrock shake I had whipped up for him. And he was pretty much spot on. The minty green shake did, indeed, taste pretty much like a candy cane. But to think, instead of sugar laden and full of artificial ingredients, THIS particular one was created with healthful, real food, low carb ingredients!

What makes this beverage like treat different than a smoothie is the fact that its base (the bulk) is actual ice cream! This also puts it in a bit more of a dessert category rather than say a breakfast category. But, of course, you’re still more than welcome to enjoy it for breakfast!

One thing I used in this recipe which some people may not like (hence the reason it’s an optional ingredient) is green food coloring. I used a natural, food derived food coloring so it still holds its integrity as healthful. However, if you’d rather not use actual food coloring, you can try adding a few spinach leaves or use either spinach powder or matcha. Or you can simply not use any food coloring as well (this is what I’m going to do from here on out–I really only added the food coloring so the pictures would be pretty!).

Another thing I did in this shake was use Young Living Peppermint Vitality essential oil. This supports the digestive system which makes it even more healthful! However, if you don’t believe in taking essential oils internally, feel free to peppermint extract (which, technically, also includes essential oil in it).

Instructions

  • Pour the milk and water into the jar of a blender.
  • Add the remaining ingredients except the food coloring, whipped cream, and mint leaves. Blend until smooth.
  • While blending, add the food coloring one drop at a time until the desired green color is achieved.
  • Garnish with whipped cream and mint leaves.

Notes

Feel free to use homemade vanilla ice cream and/or homemade whipped cream. Keep in mind that this may turn the fuel type into an S for THM.
