  • 1 egg
  • 2 tablespoons mozzarella cheese, shredded
  • 2 teaspoons THM Gentle Sweet (more or less to taste)
  • 1 teaspoon chocolate chips (THM, Lily's, or Bake Believe)
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon maple extract
  • ¼ teaspoon butter flavoring OR mint extract, optional
  • 1 pinch mineral salt


  • In a small bowl, beat the egg. Add the remaining ingredients and whisk together.
  • Spray the waffle maker with nonstick cooking spray.
  • Pour in the mixture and cook until desired doneness (from soft to crispy).


To enjoy, you can eat this chaffle all by itself or with a bit of whipped cream on top. Another way (though heavier on the fats/calories) is to make 2 of them with whipped cream in the middle.
