Simple pumpkin and earthy pumpkin spice are the stars in this easy, creamy, comforting pumpkin hot cocoa recipe.
Nothing says fall like curling up under a warm, soft, cozy blanket with a big mug of a hot, creamy, sweet hot cocoa. And to make it even more fall inspired, add some pumpkin and pumpkin spice!
The inspiration for this recipe was basically just the desire to have pumpkin pie and hot cocoa at the same time. So I combined the two to create this yummy Pumpkin Hot Cocoa recipe.
And this post should have more words to it to make search engines happy, but I really cannot think of too much else to say about this hot cocoa other than it is pretty yummy and it is great to make in the fall (or autumn) and winter. And it’s Trim Healthy Mama friendly but also works for keto, sugar free, and low carb diets. You could even serve it with your Thanksgiving breakfast or meal (slightly grasping at straws here)!
Things That Go with Pumpkin Hot Cocoa
I have a couple recipes that will go excellent with your hot cocoa! Specifically, my homemade marshmallows recipe (these can be flavored if you like–I recommend caramel, pumpkin spice, cinnamon, or chocolate) and my homemade whipped cream recipe. You could also top it off with store bought fat free Reddi Wip.
Pumpkin Hot Cocoa
Ingredients
- 2 cups unsweetened plain almond or cashew milk
- ¼ cup plain pumpkin puree
- ¼ cup
(1 scoop) THM Chocolate Whey Protein Powder (optional but adds creaminess; Vanilla Bean or Cookies-n-Cream flavors work also) - ¼ cup
Lakanto Classic or equivalent sweetener (more or less to taste) - ⅓ cup
unsweetened cocoa powder - 2 tablespoons heavy cream (optional; makes the recipe an S; adds creaminess and flavor)
- ½ teaspoon
pumpkin pie spice - ½ teaspoon
ground cinnamon - pinch mineral salt
- ½ teaspoon
pure vanilla extract - ½ teaspoon
maple flavoring (optional)
Instructions
- In a small to medium saucepan, whisk together the milk, pumpkin, protein powder, sweeteners, cocoa powder, pumpkin pie spice, cinnamon, and salt.
- Bring to a boil over medium-high heat, stirring frequently to prevent boiling over.
- Remove from heat. Add in the vanilla and maple flavoring.
Serve with homemade marshmallows or top with whipped cream.
