Featuring the flavors of smooth peanut butter, rich chocolate, and a hint of butter, this quick and easy-to-make breakfast oatmeal features all the flavors of a yummy no bake cookie (or peanut butter delight as you in the South might know it by)!
I LOVE the no bake cookie. You know the kind I’m talking about, right? The kind you make with peanut butter and chocolate and oats and butter and vanilla…you mix it all together in a pan then scoop it out onto parchment to cool. The resulting cookie is soft and yummy. And can easily be made Trim Healthy Mama friendly by simply using sugar free peanut butter and an on plan sweetener, but…because of the oats…it would be a mega Crossover. Which is good for those in maintenance mode, those who don’t mind losing weight slower, and Trim Healthy Kids. But me, I’m still trying to get my slender on.
So I decided to make a breakfast oatmeal that tastes pretty similar to the no bake cookie. Which is how this recipe was born.
Something to note about this recipe is that you really need to use fresh defatted peanut flour. Fresh is important because if it is less than fresh it’ll have a kinda bland, cardboardy taste.
Another thing to note is to be generous with the sweetener. Both the peanut flour and the cocoa powder need balanced with sweetness. So if you totally make the no bake cookie breakfast oatmeal and take a bite and it’s bla, add as much more sweetener as you like until it’s tasty.
No Bake Cookie Breakfast Oatmeal
Ingredients
- 1 cup unsweetened almond or cashew milk
- 3 tablespoons
THM Gentle Sweet or equivalent sweetener - 2 tablespoons defatted peanut flour
- 1 tablespoon cocoa powder
- ⅛ teaspoon mineral salt
- ½ cup slow cook (old fashioned) oats
- ½ teaspoon vanilla extract
- ½ teaspoon butter flavor, optional
Instructions
- In a small saucepan*, stir together (mostly, it might not all dissolve together yet) the milk, sweetener, peanut flour, cocoa powder, and salt.
- Bring to a slow boil, whisking often. Mix in the oats.
- Turn heat down to low. Stirring often, allow to cook till soft.
- Remove from heat and stir in the vanilla and butter flavorings.

Made this, loved it. Until I imported the recipe into MyFitnessPal and discovered that the calorie count list here is at least 50% less than it should be. That really bums me out.

Hi, Cody. Glad you liked it! And yeah, unfortunately My Fitness Pal doesn’t have the correct ingredients listed and is frequently inaccurate. The company that makes my recipe card nutrition generator isn’t always accurate either (Fitness Pal is one source they draw from too) which is why I have the nutrition disclaimer. Best way to figure it out is by looking at each of your ingredients that you use (their nutrition facts can vary from brand to brand as well). Hope that helps. Have a great day!

My kids were in love with the smell of this while cooking. The 6 yr old said put less oatmeal in it next time (ha!). The 3 yr old gobbled it up. I thought it was rather tasty, but next time I’d cut back from the 3tbsp of sweetner (I’m not a super sweet fan for reference). Great recipe though. Any time I can get the kids to eat oatmeal it’s a win, many thanks!

Thanks heaps for this recipe! I’ve been scared to try a new flavour of oatmeal but something about this recipe made me want to try it and it’s great! I’ve made it a few times now and think I have finally settled on the right amount of gentle sweet for me. I prefer just over 2 Tablespoons.
To make it easier for me (I’m a total drive thru sue!), I used your ingredients but used pretty much the method of the THM Sweatpants Oatmeal. I just chuck all the ingredients into the saucepan, stir over high heat until bubbling, then turn heat down to low and cook for 3 minutes stirring constantly. Then I take it off the stove and leave to sit for 10 minutes. Then eat. I have also tried doing 1/2 cup almond milk and 1 cup of water like the sweatpants oatmeal and it worked great. 🙂
