Selecting Beets
Choose beets that are fairly small, firm, and a rich maroon color. The greens should be crisp and bright green. The taproot (the skinny root on the bottom) should be present (not cut off).
How to Store Beets
When storing beets, cut all but about 1 inch of the greens off as they suck moisture from the root (keep the green though, they can be eaten as well). Put in a sealed zippy bag or other container in the crisper drawer of the refrigerator for up to 2 weeks.
How to Freeze Beets
Wash the beets and add them to a pot of water. Bring to a boil. Cook for 30 minutes to 1 hour until tender enough to stab with a fork. Run under cold water until cool to the touch or plunge in a bath of ice water and rest until cool to the touch. Remove the peels using your hands. Chop up the root if desired. Spread in a single layer on a parchment- or silicone-lined baking sheet and freeze. Transfer to a freezer safe zippy bag or other container.
