Keto Net Carbs
4 net carbs per artichoke (may vary based on size and variety)
Selecting Artichokes
Choose artichokes that feel heavyish and solid (they feel lighter as they get older). Pick ones that have thick, tightly closed, deep green leaves. The leave should squeak when rubbed.
How to Store Artichokes
Artichokes should be stored in the refrigerator.
How to Freeze Artichokes
Trim the artichokes then place them in boiling water for 10 minutes (this is called blanching). Thoroughly drain, cool, and cut them in half. Place on a parchment- or silicone-lined baking sheet and freeze. Once frozen, remove from the baking sheet and store in freezer safe zippy bags or other containers.
