Chicken and Grape Salad

A creamy, low fat dressing, scrumptious spices, tender chicken, and sweet grapes make up the sum of this quick, easy-to-make chicken and grape salad.

Chicken and Grape Salad

I remember the first time I enjoyed a chicken and grape salad. I actually helped make it for the reception of my best friend’s wedding. It was just so yummy! But, because I didn’t make it on my own soon afterwards I mostly forgot about it.

Until I spotted it again in our local grocery store. Yummy chicken and grape salad! This version had toasted almond tossed in it too, which made it even yummier.

So I started regularly making it at home for a quick and easy lunch. Our grocery store sells already shredded chicken and turkey which is super convenient.

Then I started Trim Healthy Mama. And my chicken and grape salad love was set aside for a while since it contained lots of mayonnaise (a fat) and lots of grapes (a carb). That is, until I got around THM-ing it.

Below is the resulting THM-ed version of that traditional, very yummy, and filling chicken and grape salad recipe. It is now once again a go-to for quick, easy, and delicious lunches. I usually whip up the whole recipe and just eat it up by itself!

What Readers Say

So one NEGATIVE thing readers have said concerning this recipe is that it is a copy of a similar recipe found in the Trim Healthy Table cookbook. While it’s true that it’s similar, it was in existence BEFORE Trim Healthy Table was (since 2015 to be exact; my recipe was published on my website Measuring Flower first, then here as of June 27, 2017; Trim Healthy Table wasn’t out until September 12, 2017).

But, here are a couple POSITIVE things people say about my chicken and grape salad:

Ingredients
 
 

For the Dressing

  • ¼ cup 0% plain Greek yogurt
  • 1 wedge Laughing Cow Cheese (any kind except the original swiss)
  • ¼ teaspoon dried dill weed
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon mineral salt
  • ⅛ teaspoon ground black pepper

For the Salad

  • 1 cup shredded white meat chicken or turkey
  • 18 seedless grapes, whole or halved
  • 1 stalk celery, diced
  • 1 tablespoon red onion, diced (optional)
  • ½ teaspoon sliced almonds, toasted
Prevent your screen from going dark while using this recipe.

Instructions
 

  • Whisk together all of the dressing ingredients in a bowl.
  • Add all of the salad ingredients and gently stir until coated with the dressing.

    In your directions, you specified a wedge of Laughing Cow cheese and said to just whisk it in – but the wedges don’t really break down. How did you get yours to break down in your dressing?

    I was searching for new Trim Healthy Mama (THM) friendly “E” meals when I ran across this culinary masterpiece! The seasonings are perfectly balanced. It uses ingredients that are staples in my house & it’s a fantastic, quick lunch to make for my husband when we don’t have any dinner leftovers for him to take. My two year old gobbles it up & it’s my all time favorite chicken salad recipe. I served it to friends who came for a visit recently. They commented on how tasty it was. I have also used the dressing from this recipe for tuna salad. Additionally, I’ve mixed it with hard boiled eggs, leaving out the grapes, to accommodate a guest who eats a vegetarian diet. Thanks for the “E” meal assist for a THM who struggles with creating “E” meals!
